Our bees gather nectar all summer from natural flowers around the farmstead.  They start early in the spring when the trees are blooming and are still working on fall flowers until frost shuts down the nectar production.

Crystallization of honey is a natural process.  If you want to turn your honey back to liquid, heat a pan of water to 120 degrees F.  Take pan off heat source.  Place honey bottle into water and let set.  If one time does not completely liquify your honey, take honey out of the water and repeat the process.  Do not heat honey above 120 degrees as it will kill the beneficial enzymes in the honey.  Do not use a microwave to heat your honey as any amount of microwaving will kill the beneficial enzymes.
